Fifteen kilos of lemons from the Ribera del Xúquer, picked to order. It’s one of the few things we have almost all year round, because lemon trees crop in several waves.
This is the difference that matters. Waxed lemons shouldn’t really be zested, and the label says so in small print. Ours get nothing at all after they’re cut, so you can zest the peel for a cake, candy it or drop it into a preserve without thinking twice.
Fifteen kilos is a lot of lemons, so it’s worth knowing: in a cool spot they’ll keep for weeks. If you can see you won’t get through them, juice them and freeze it in ice-cube trays — it keeps for months and works just as well for cooking.
