What they’re like

Small, thin green chillies with fine skin and plenty of aroma, cut the day we prepare your order. Narrower and hotter than the green hot pepper, which is bigger.

What to do with them

Finely chopped in a sofrito, stews, sauces and dressings, or whole in oil to give it heat. One or two for the whole pot is usually plenty. For less heat, open them and remove the seeds and white veins, where most of it is. And mind your eyes after cutting them.

How to keep them

In the fridge, in a paper bag, they keep a good week. They also freeze whole without blanching, and you can take them out one at a time.
