What they’re like

Small, rounded habaneros with glossy skin and thin flesh, cut the day we prepare your order. Far hotter than a chilli, and they smell of fruit the moment you open one. People order them knowing what they’re getting.

What to do with them

Blended into a hot sauce with tomato, onion and vinegar, in marinades, pickles or to give heat to an oil. Use very small amounts: start with half of one and taste. Wear gloves, and wash the board and knife well afterwards.

How to keep them

In the fridge, in a paper bag, they keep one or two weeks. Frozen whole they last months, and they can also be dried.
